Adobo is a popular Filipino dish that usually consists of chicken or pork marinated in vinegar, soy sauce, garlic, and black peppercorns, then simmered gently in the marinade. Every region in the Philippines has its own version of this dish.
Cocoa from Malabog
Theo & Philo works with cocoa from the barangay Malabog, a community of approximately 11,000 people that is part of Davao City, the largest city in the Philippines by area. Everything in Davao City is flat and very green, stretched out over hilly landscapes.
There are many small cocoa farmers in Malabog. The conditions for cocoa are perfect. For example, in 2019, Nong Joe, one of 226 participants from 55 countries, won the award for the best cocoa beans in the world at the International Cocoa Awards (ICA) .
Philo Chua sources cocoa from a group of farmers in collaboration with the Gawad Kalinga organization. Gawad Kalinga helps lift people out of poverty.
